Miso Glazed Salmon

Miso Glazed Salmon

A recipe by Sasha Swerdloff

Serves 2

Ingredients
  • 1 8-ounce salmon fillet
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 2 tablespoons miso
  • 2 bunches scallions
  • 1 tablespoon olive oil
  • ½ teaspoon salt
Procedure

Preheat the oven to 350 degrees. Place the salmon on a parchment lined baking sheet, skin side down. Combine the sesame oil, honey, soy sauce and miso in a small bowl and whisk until smooth. Spoon the marinade over the salmon fillet. Bake for 3-4 minutes. Move the baking sheet to the upper rack of the oven and broil the salmon on high for another 3-4 minutes, until the glaze has caramelized and turned a deep shade of brown and the salmon is just cooked through.

Toss the scallions with the olive oil and salt to coat. Grill on high until soft and charred in places. Alternately, use a grill pan or roast in the oven at 500 degrees.
